Buying books for school is never fun. Buying law school books that cost an arm and a leg is even worse. I tried to sell back a book I bought for nearly $200 three months ago. Guess how much they wanted to give me? $9! NINE FREAKING DOLLARS!!! A-holes. I laughed and posted the books on Amazon instead. Someone already bought one of my books so Barnes & Noble I hope you're reading this- Kiss my booty. 9 dollars, you've got to be kidding me.

For Christmas my mom gifted me this furry wrap scarf pictured above. Fortunately it hasn't really been cold enough in Dallas to sport it but I wanted to wear it so bad this weekend that I added it to my lame-o ensemble. See what some fur can do? From lame to glam-ier in seconds.

fashionable foodie: asparagus and cheese stuffed mushroom

After eating like a piggy for 14 days in Mexico, I am on a sort of detox. I ate fish EVERY SINGLE DAY so I'm trying to steer clear of seafood at the moment (never mind that I ate sushi last night). This meal inspiration came from a freezer bag full of asparagus gifted to me by my boss after a party she threw at her house. I had some portabellos in the fridge, so I googled asparagus stuffed mushrooms and this recipe popped up on Cooking Light online. I am such a fan. I used queso fresco instead of parmesan and I made a simple dijon vinaigrette with lime, dijon and olive oil as a topper. Delish- enjoy!!

When the temperatures drop we always reach for the warmest, coziest items in our closet. In order not to look like a total slob it's important to layer and try to make items in your closet work in not so expected manners. I usually wear this vest for example, with a long sleeve t underneath. But you know what, that seemed boring, so flowy cardigan and tank it was, and it worked! Try it out yourself.

To say the absolute least, I was feeling pretty down last Friday about how poorly I did on my exams. I was just pooped half way through and was forgetting everything I had studied so very hard for. Can you tell by my face/outfit color what kind of mood I was in after 5 finals FIVE DAYS IN A ROW? It was pretty much a "get alcohol in me quick" kind of face/outfit and thank god, the message was conveyed and responded to correctly. After not drinking for a good month straight, two glasses of wine made me quite happy and turned that frown (you see above) upside down!!

For any of you considering law school. It's horrible. They're not lying. I was 5000% into going to law school as an entering 1st year and now, as a 3rd year law student I seriously question what the f I got myself into. You better want it bad because once you're in there's no looking back... Did I scare you yet?

Anytime my mom or her friends would give me ornate scarves I would always think "oh great, another scarf." But now that I've matured, I've realized those scarves come in quite handy... Think of this outfit without the hot pink scarf or lips-booooring! This hot pink scarf really adds a punch.

See my wrist? Do you love my new watch? I got my Christmas bonus right before finals and for two seconds thought smart things like putting it towards my car payments, buuuuuuuuut Neiman Marcus Last Call is on my way home. So let's be serious, I bought this watch and "saved" the rest.

fashionable foodie: agave whole wheat banana pancakes (bananas optional)

Nothing makes me smile like pancakes. I grew up begging my dad to get out of bed and make me them every Sunday morning. Now, my boyfriend wakes up begging me. Oh, how things have changed. The best part about these particular pancakes is that they are 100% whole wheat, require no butter and therefore carry NO GUILT!! My favorite kind of food!! Enjoy!

Ingredients:

- 1 cup whole wheat flour

- 3 tbsp e.v.o.o. or canola oil

- 1 tbsp or so of agave

- 1 cup unsweetened almond milk

- 2 tsp baking powder

- 1/2 tsp salt

- 2 egg whites

- 1 egg

- 1 tsp of vanilla

- 1 tsp of cinnamon

Preparation:

- Stir the agave and oil together with a whisk.

- In a separate bowl, beat the eggs until they are nice and fluffy. (use a beater if you're weak)

- Add the milk, vanilla and eggs to the oil mixture.

- In another bowl sift/mix the flour, cinnamon, salt and baking powder and slowly add it to the wet ingredients until the flour is moistened.

- IF YOU LIKE BANANAS, which you should because they're good for you unless they're brown because that's gross, slit a banana in half then cut horizontally into the mixture. Beat them in. (some people fold them in, I like mine beaten so they're fully incorporated).

- Heat a skillet or grill pan on medium heat, spray with fat free non-stick oil and cook about a minute on each side.

- Serve with nonfat whipped cream, maple syrup and the berries of ur choice!! Enjoy!!

My best friend from highschool's baby shower was this weekend and since she's having a girl I thought I'd dress in pinks. The best part about living in Dallas now as opposed to New York or Chicago is that I get to enjoy those fall days where skirts and boots with a light sweater is comfortable and cool. If I were in Chicago my skirt would be blowing over my face and I'd be freezin my tush off!!

Elie Tahari has opened at North Park Dallas. Woohoooo!! The opening event was this past Thursday and it was such a blast! I was surrounded by beautiful people and beautiful clothing. Lace was definitely the trend and as you can see above, my favorite item of the line. I'm DYING for those black leather shorts with lace. HOT!!! A lot of people leave me comments and emails asking how I do my hair. To be honest, I rarely blow dry it. Maybe once a week if that. It's not that I dont like to blow dry my hair....well yes, it is that, but on top of that, I don't have time. A full time law student with a full time-ish job just doesn't have enough time to do her hair every morning. So, I must rely on awesome products to make my hair look pretty...

Oribe takes center stage when it comes to my hair (obsessed). Their products are just amazing. My favorite shampoo and conditioner are the Ultra Rich ones because they are sulfate-free (which means they don't dry out your hair- yay!) Also- the Fekkai beach spray is great to pump up your waves. Trust me, I've tried them all, Bumble and Bumble, John Masters, John Frieda- BUT Fekkai's wave spray is by far the best and smells OUTSTANDING.

Routine: Most mornings I rub on the shine cream then spritz my hair with beach spray while running out the door. On days that I do manage to find an extra 30 minutes to blow dry my hair I use the shine cream, blow dry, use velcro rollers to hold, then spray with anti-humidity spray. If I only have 15 minutes and I decided not to wash my hair, I spray the dry texturizing spray and curl my hair with a 1 1/2 inch curling iron.

Yes- I'm bringing back the jean skirts...and the crop tops, deal with it. Who wants to wear a long shirt under this skirt? Not me, I don't want to look like I'm hiding something under there. Trust me ladies, cropped tops and sweaters are the way to go with high waisted skirts and pants, that way you can tuck in the front to look "composed" but don't have to worry about the shirt wadding up around your buttox or even worse around your hoohoo. NOT ATTRACTIVE. Buy yo'self some crop tops with pretty detailing like the lace on my sleeves that you can barely see. Or some pretty buttons or sequins and glitter...

This week was pretty crazy. I was in a horrible accident on Tuesday morning and am lucky to be alive (not exaggerating). Funny how all of a sudden your life goes in perspective, the little things are just that, little and you thank God the ones you love weren't in the car with you. After a nutty Tuesday, I was miraculously at school on Wednesday, albeit pretty sore. While grabbing a much needed lunch across the street from my law school I was pleasantly surprised by Ms. Jaclyn Welch of Streets of Sparkle and Sparkle Birds. If you expect me to get an hour run in before work/school, you've got to know there's gonna be no time for me to do my hair. I either leave with it sobbing wet (if it's warm enough) and if not, I do some variation of a bun as I'm running out the door. Friday was one of those days, but being such a great day (last day of the week) I needed to at least dress decent. I was obsessed with this dress from Strut because of it's toned down leopard print- perfect for work. Also- I've worn this Madewell jacket a million times. It was worth every penny and drapes nicely over any outfit.

I have to start off with saying that I never post a review about a product I do not absolutely love. There are many amazing jewelers that have asked me to review their products but if it's not my style it's not fair to them or to my audience for me to rave about something I wouldn't rave about to my friends. Ever since I got this ring from ANJOLEE, however, I have gotten crazy amounts of compliments. I am wearing the Everlasting Love ring (ON MY RIGHT HAND PEOPLE, I AM NOT ENGAGED). The gorgeous Christine of The View from 5 ft 2 accompanied me to The Dallas Flea this past Saturday afternoon. We went in with an open mind since we had never gone before and were more than pleasantly surprised. Above are a few of my purchases....studded mirrors from The Invisible Canvas, amazing thank you notes for my boss (who drinks about 10 of these a day) from Southern Fried Paper and the most adorable Halloween/Mexican art piece by Sarah Zamora- I want more already. The problem with these mirrors is I had NO where to put them...but I was determined to find a place. I went to HomeGoods to help the bf pick out pieces for his new office and discovered this amazing table... that is now my liquor table. Funny how you buy one thing and now need more things to make that one thing work. Now that I have the table to lean the mirrors on guess what's missing? Some Don Julio tequila and a bottle Kettle....and a martini shaker....and martini glasses and hell probably some potted orchids as well. See?! Never ending cycle here. I don't regret it. Christine was so right, once I finally DO move into a bigger place (no time soon) I will be devastated I didn't buy these matching mirrors. O Dallas Flea, how I love and hate you at the same time. My apartment looks cozier but my wallet does not.

Today was the first day in years that I have worn regular jeans versus my usual skinnies. Rough jeans just have something about them that I've missed from my spandex "jeggings". fashionable foodie: mushroom enchiladas.

Whenever someone says "lets go get some mexican food" I laugh inside, well thats a lie, most times I just laugh out loud. You Americans have no idea what REAL mexican food tastes like. My mom is 100% Mexican and she cooks 100% Mexican food--not burritos and queso with chili. I'm talking real authentic Mexican food. Enchiladas from your local Tex-Mex joint will never compare to those my mom makes with fresh tortillas and vegetables. This past weekend, I went a step further and substituted my mom's corn tortillas with whole wheat ones from Whole Foods...just to be extra healthy. Also- it makes a BIG difference to make your own salsa from scratch (and if you have time roast the tomatoes, peppers and garlic before even a bigger difference). Just like with any ethnic cooking, fresh ingredients are essential. They will make or break your dish. What most people assume is absolutely horrible for you (like enchiladas) can actually be healthy if you use the right stuff. Follow my lead...

Ingredients:

- 6 large tomatillos, chopped

- 3 serrano peppers, chopped

- 1/2 onion, thinly chopped

- 1 cup of cilantro

- 1 garlic clove

- 8 whole wheat tortillas

- 2 packs of baby bella mushrooms, chopped

- 1/2 ball of oaxaca cheese, shredded or pulled apart into small pieces

- cherry tomatoes, queso fresco and avocado optional

Preparation:

- Preheat oven to 350 degrees.

- To prepare salsa put the tomatillos, peppers, onion, cilantro and garlic clove in a food processor. Add a touch of water and olive oil and blend. Put it in a pot and bring to a boil, then simmer for 15 minutes. Add salt and pepper to taste.

- In a saucepan, chop the mushrooms and add salt, pepper and garlic salt. Saute until the juices of the mushroom have evaporated.

- Put mushrooms to the side, in the same pan place the tortillas on low heat and heat through until they are warm.

- Grease a medium casserole dish olive oil. Add the tortillas one by one and fill with the mushrooms until you've used all of the tortillas that can fit in the dish.

- Pour the salsa over the tortillas then add the oaxaca on top.

-Place the casserole dish in the oven and cook for 30 minutes or until the cheese is golden.

- Garnish with chopped cherry tomatoes, queso fresco, cilantro, avocado and extra salsa. Enjoy!!

It's happened y'all. I've finally found the best veggie burger in Dallas and it lives at The Twisted Root in Deep Ellum. Not only is the burger fantastic, but it has a no bullsh*t Texas feel. My boyfriend got called up as Michael Kelso and the guy after him was asked to take his weener of the counter. His weener being the hot dog he ordered, of course (you sickos). The place is fab and boy do they serve stiff drinks. A bloody mary will cost you 3 bucks and if you're a weakling like me, you'll take a 3 hour nap after having one. I hope everyone enjoyed their weekend.

One of my favorite girlfriends got married this past weekend and she looked so stunning that I had to share with you all. Her dress was absolutely phenomenal (love the bow on the back and the train ooooo the train). I wore a dress by Shoshanna and vintage jewelry that belonged to my grandmama. I alsoooo used The Beauty Department for a how-to side ponytail. This "do" is called "Knot Your Average Pony" and was the perfect style for my dress. You must check the site. It's written by Lauren Conrad, her makeup artist and her hair dresser. It's great for inspiration or step by step tutorials for us girls who don't have the time/money to hit the salon before a big event!!

This weekend I had the mighty pleasure of dog sitting my bosses dogs, Rose and Lily. The bf has been dying for a bull dog but that just ain't happening so this is as close to "owning" one as he'll ever get. I must admit we had a blast taking them around West Village (dallas west village, not nyc) and everyone was dying to pet them...well everyone was dying to pet Rose. Lily would get the occasional "this other one's cute too..."

On Friday I finally caved and replaced my basic tanks after eyeing these reversible ones at Anthro for the past couple of weeks. It's so stupid the way I procrastinate buying basics like these because they're -gasp- 24 bucks but I see something shiny and sparkly and way more expensive that I'll wear once and don't think twice about the purchase. I got two tanks- one in black and another in white and will probably be going back this week for a red and navy. They're perfect, reversible for v neck or scoop and are EXTREMELY comfortable. Trust me, they're awesome and they'll be perfect come fall to put under all my favorite cardigans and chunky sweaters.

fashionable foodie- chiles rellenos de queso fresco

Stuffed poblanos are such a crowd pleaser. Not to mention you'll lure your neighbors over with the strong aroma they give off while roasting. They are also great to prepare ahead of time for a dinner party and quickly throw in the oven at the last minute. Side note- my mom makes a breakfast version with scrambled eggs and bacon or a heavier version with ground beef. I just don't eat meat and will hardly ever be up that early to make the breakfast version so queso fresco stuffed poblanos it is!

Ingredients:

- 8 chile poblanos

- 1 package of queso fresco

- 1 large avocado

- 6 cups of cooked beans

- fresh salsa

- 2 cups of cooked wild rice/brown rice

Preparation:

- Set your oven on broil. Place the cleaned poblanos on a cookie tray lined with tin foil. Place them in the oven and rotate them with tongs until they are completely roasted.

- Take the poblanos and place them in a colander in the sink. Under cold water, remove the skin. Cut a thin line down one side of the poblano, remove the seeds. Preheat the oven to 350 degrees. Place the poblanos back on the cookie tray lined with foil.

- Blend the cooked beans in a blender. Add a cup of water, a tsp of olive oil, dash of salt and pepper. Once the beans are a soupy consistency move them to a large pan and cook on low heat until warm.

- Cut the queso fresco into 1/2 inch slices and stuff the poblanos with 2 to 3 pieces of cheese. As much as there is to go around. Put the poblanos in the oven for 10 minutes or until the cheese is almost completely melted.

- Take the poblanos and place 2 on each plate, pour a ladle of beans over the peppers and garnish with cubed avocado and fresh salsa. Serve with fresh cooked rice.

- Enjoy!

Now that I'm back in school I have very little time to play on the weekends. On Sunday though, my boyfriend forced me out for some brunch at The Porch on Knox and Henderson. I can't lie- the whole time I was there I was thinking about how much work I had to come home and do, but I'm very glad he made me get some fresh (100 degree) air. It's important to always take a step back and walk away from your work. Then, come back with a new perspective. Keep that in mind folks, or else you'll drive yourself nuts.

Now that I'm spending about 60 hours running back and forth from school to work, I have no business buying any clothing that isn't appropriate to wear in both settings. After some crazy college years and some pretty crazy post college years as well, I have way too many "going out" clothes ~~to put it lightly~~ and not much appropriate everyday clothing. I'm not saying you have to look like a granny-- my boss definitely accentuates her assets and still looks fabulous and approp (my new favorite word/abbreviation). The key is to not look tacky. So lately I've been opting for easy options that I don't have to think about too much.Take these bow front blouses for example- they cover you up so well on top that you can get away with wearing a shorter skirt than usual. Plus, if you get the sleeveless options you can take your cardigan/blazer off after work, loosen up the bow and be ready to meet your girls for some happy hour cocktails. They are a must in your closet this fall so be sure and stock up!

One of the things I can say about New York is that I never felt at home when I walked into my apartment. There were always so many problems (i'll spare you the gory details) and it was just too small to ever feel like our apartment was my own space. Flash to the present/Dallas and things are WAY different. The number one, most important thing to remember when decorating an apartment is NEVER do it all at once. Your place will look like it came out of an ikea catalogue. Decorating your apartment is a process. Practice patience and make sure you love everything you add. Also- don't be one of those people who gets matchy matchy stuff. You know what I'm talking about, lime green bath rug, lime green curtain, lime green towels. So lame. Everything is about different combinations and textures and ALWAYS having a fresh pair of eyes (thanks Val) to look over your apartment and tell you what works and what doesn't. My apartment is still nowhere near finished but it's slowly coming along-

This path I'm standing on above runs behind my apartment building. You Dallas folk are familiar with the o so loved Katy trail- for those of you non-Dallasites ~~aka losers~~ this is a popular path people use to go on strolls, running, walking the dog and some ~~alcoholics~~ people like us, use it to walk to the bars. We used it to go to a bar this past Friday as a matter of fact. But we didn't just go to any old bar, we went to the Ice House. It's pretty much the coolest bar around with a million outdoor patio tables, cornhole, huge goblets full of beer or booze and misting fans to keep us Texans as cool as possible. If you're ever in Dallas you have to check the Ice House out. It's pretty dangerous that I can walk there from my apartment, pretty pretty pretty dangerous.

fashionable foodie: grilled portabello parmesan and pesto oriecchette with broccoli

As a vegetarian (who eats fish), it seems like eating Italian means eating unhealthy. But thanks to inspiration from Giada at the Food Network, I was able to make a healthy spin on the classic portabello parmesan. No butter, white flour, eggs or bread crumbs in this recipe! No can do ladies and gents- I'm going to the beach in less than two weeks! Instead, you just get some delicious, colorful ingredients that will even make a carnivore's mouth water. Enjoy!!

Ingredients:

- 4 portabellos

- one package of whole wheat oriecchete

- 1/2 cup of shredded parmesan

- 1/2 cup of low fat shredded mozzarella

- 8 vine ripe tomatoes

- 5 cloves of garlic

- 1 cup of fresh basil

- 3 cups of broccoli, roughly chopped

- 1/4 cup of red wine (if you won't drink it, don't cook with it)

- 1/2 cup of red onion

- garlic powder

- good olive oil

- regular olive oil

- 1/3 cup of walnuts

Preparation:

- Preheat the oven to 400 degrees.

- Start with the marinara. To a large hot skillet with olive oil add 2 cloves of garlic, a dash of crushed red pepper and onion. Stirring constantly until lightly brown. Add the red wine and let simmer until its almost completely evaporated. Add the tomatoes and a pinch of salt and pepper, put the lid on and let it simmer for about 15 minutes.

-Next, in a food processor grind the basil, 1/4 cup of parmesan, walnuts, and 3 cloves of garlic. Use the good olive oil while it's processing until it reaches a desired consistency. Add a squeeze of lemon if you'd like to wake it up a bit.

- Cook the pasta according to the package directions. Drain in colander and rinse with cold water.

- Heat a grill pan or a grill. Brush the portabellos generously with olive oil, sprinkle with salt, pepper. Let cook on the grill for about 5 minutes on each side until they are tender.

- In a glass baking dish spread 1/2 cup of the marinara to the bottom. Add the portabellos and then dress the tops with the rest of the marinara. Add the parmesan and mozzarella to each cap and put them in the oven for 15 minutes.

- In the same pan you used for the marinara heat some olive oil and toss the broccoli until they reach a desired tenderness. (I like mine almost raw in the summer, and more cooked through in colder months). Add the pesto and pasta and stir. If you need to, add a 1/4 cup of water for the pesto to spread more evenly.

- Take out the mushrooms and serve by cutting around each cap. Dress them with the marinara sauce and put the orecchiete on the side. Dig in!!

Now that I've moved back to Dallas, people keep asking me how the transition is going. The first thing I think of, of course, is the fact that I can't wear the same clothes I used to in NYC. The heat in Dallas right now calls for loose flowy cotton fabrics. If you wear any silk during the day you are asking to have the world know how much you sweat (not attractive ladies). Instead opt for layers- the a/c is blasting in every building across the city so layering is a must while at work or at the mall. I don't know who decides to make those places below zero but I don't like them.

I also love to carry around a jean jacket like the Helmut Lang one above (I have a GAP one that looks identical, no joke, check it out here.) Also nice is a pull over sweater like the black Alexander Wang Scoop Neck. I know it's pricey, but its just inspiration. I'm sure H&M or Zara has something similar. So if you're moving from one part of the country to another, taking a trip somewhere new or just adjusting to this crazy heat wave, take my tips and you'll always look fabulous. ~~and if you dont youll look like poop.~~

Ok, ok. A lot of my latest photos have been taken in Highland Park Village. I know, I'm sorry. I was studying all weekend for the MPRE (for all of you non-legal folk that stands for multi-state professional responsibility exam *the one you take before ~~selling your soul away to the devil~~ taking the bar exam). The bf and I took a break from me studying ~~and him trying to get me not to study~~ and ate at Celebrity Bakery- so yum, and so meant to submit these pics as a post for a Gilt City competition (that ended yesterday) but you know what?! I've been busy and haven't been a very good blogger. I wish I could promise I'll be better this time, but with my job at Fox News, my job at a law office and studying for the MPRE, I don't see the light at the end of the tunnel just yet. O wait, I do. That light is called Puerto Vallarta and I'll be there on August 15th. So, I promise byAugust 15th I'll be better about blogging. Deal? and I'll write back to your comments by then as well.

I don't want to lie. It's tough to settle for subpar brunch food after coming from a city like NYC where there are so many good places you don't know where to pick from. This past weekend we went to Dream Cafe at the Quadrangle. It's not the best brunch in the world but it's quaint and has some character. For example, instead of putting your name in at the door, you get a record with a famous singer on the cover. We were Frank Sinatra the people after us were Judy Garland. That's how they call you out. Also great- they have a ton of vegetarian options. So all in all, this place is definitely worth a stop if you're obsessed with tofu eggs, if not, it's a dependable spot if you're hungover and don't want to try something new.

In more exciting news...my boyfriend and I went to an advanced screening of Crazy Stupid Love on Tuesday night hosted by Gilt City . Let's be serious, it's tough to judge a movie when Ryan Gosling's in it. Any movie he stars in can't be bad....because he's such a good actor and all...~~and because he's the hottest man alive, besides my boyfriend of course*wink*wink *nudge *nudge.~~ If you want to get a good laugh ~~and some amazing eye candy (think Gosling half naked, half movie)~~ then this is the movie for you!! I hope everyone in Dallas is taking advantage of Gilt City now that we have it. It's so amazing and the other coupon sites do not even compare!!!

Leaving NYC to come to Dallas wasn't as tough as I thought it would be. Yes I miss my favorite NYC restaurants and the ability to walk everywhere, but Dallas has an irreplaceable southern charm. I grew up going to Highland Park Village just down the street from my parent's house. They have great restaurants (including Patrizio's with dollar bellinis this month and the best patio in Dallas), great stores (Scoop, Christian Louboutin, Jimmy Choo, DVF, Tory Burch, Vince, to name a few), and the basics (Starbucks, grocery store, and a cheese and wine shop). This shopping center holds my heart and a whole lot of memories....

Now, one of the sites that really allowed me to fully enjoy NYC was Gilt City. It forced me to try new places on sale on their site that I wouldn't automatically pick on my own. Now, Gilt City's expanding into Dallas and a few other cities and I am just ecstatic about it. It's not like the usual coupon websites, with dinky specials- this site is sooo much better. So check out the site and get shoppin guys and gals!!

My girlfriend's bridal shower was Saturday afternoon. It's the type of occasion you want to dress up for, but not go over the top (it's during the day after aaaall). fashionable foodie: artichoke dip

Maybe the title of this post should be dip for artichokes but that's too wordy so you get the more confusing artichoke dip- FYI no artichoke in the dip, until u dip the artichoke in it of course...have I confused you enough yet?

I feel like a lot of people are intimidated by artichokes. How do you cook it? Do you need to trim the ends? It takes too long....Well listen, all you have to do is start boiling some water with a splash of olive oil and sea salt. Drop the artichoke in there with the lid on after it and let it boil for an hour and a half or so (until the leaves easily pull off). I don't trim them, but you can if you'd like. Now for the dip- it's very plain and simple, but its a crowd pleaser every time. It's like a deconstructed deviled egg. Deeelish.

Ingredients

- one boiled egg

- one tbsp of light mayo

- one tbsp of dijon mustard

- one tsp of olive oil

- the juice of half a lemon

- cayenne

- sea salt

- pepper

Preparation

- mash the egg in a bowl with a fork...simple enough.

- add the rest of the ingredients and stir. add a dash of salt, pepper and cayenne to taste. I obviously like more cayenne than you guys so I add a whole lot, but season as you wish.

- dip your heart away!! (artichoke heart that is)

My birthday was so fabulous. I was surrounded by great friends and family which is all I can ask for (last pic with Christine of View from 5 Foot 2-love her). I begged my mom not to throw me a party because one, I'm 26, not so exciting, and two, I didn't really want to have the stress of a party. Thanks to my mom and sister, the party was so relaxed and just a blast. We sipped on amazing margaritas and ate delicious mexican food. Let's just say no one went home hungry, that's for damn sure. fashionable foodie: fish tacos with spicy cole slaw

Ingredients:

- 2 tilapia filets

- 3 cups of chopped cole slaw

- 2 green onions

- 1/2 serrano chile

- 1 clove of garlic, minced

- juice from 1 lime

- 2 tbsp of low fat sour cream

- 4 whole wheat tortillas

- cayenne

- sea salt

- pepper

Preparation:

- Put the tilapia filets in a pyrex and rub them with a pinch of salt, pinch of pepper, cayenne, garlic and the juice of one lime. Cover with saran wrap and put in the fridge for 10 minutes.

- In a medium bowl, mix chopped cabbage, chopped green onion, chopped serrano, salt, pepper, and cayenne. Add two heaping tablespoons of sour cream and stir. Add salt, pepper, and a pinch of cayenne. Set to the side.

- Heat a skillet over medium high heat with olive oil. Place the tilapia filets on the skillet and cook three minutes on each side.

- Either heat the tortillas over a gas stove until warm and toasted or microwave between two plates for 30 seconds.

- Cut each filet into two pieces and place one half on each tortilla. Top with cabbage. Garnish with avocado if you choose and enjoy!!

So I finally unpacked my apartment last night after being here a week. What took the longest were my freakin clothes. I gave over 4 bags of clothes away before I left NYC and now I've given away at least 4 bags more. Laugh it up, my sister poked fun at me too :) We're still waiting on a bunch of furniture so I'm not showing you the completely bare areas just yet...

It wasn't until yesterday when I was sporting my flowly Forever21 leopard maxi that I realized I'd worn leopard for four days straight. That's right, Sunday through Wednesday. I have three pairs of leopard print shoes, two leopard print scarves and at least 5 pieces of leopard print clothing. What can I say? I'm drawn to it.

Yesterday we had the special pleasure of attending a blogger event thrown by Mintbox and sponsored by NARS and Rebecca Minkoff. It was a blast, to say the least. I got my hair did by Arrojo salon, Nars gifted us a full size bronzer (and primer) and we sipped on delicious mint cocktails. While packing this weekend, I noticed them in my bedroom corner and it was like Christmas! I've worn this necklace twice already and my boyfriend first says "no no don't its too gawdy" But then it's on and he likes it, and even if he didn't it wouldn't matter. Funny story huh.

Once the flares came back in style, I refused to buy them. Not because I wasn't into it, but because I own millions upon millions of jeans and had so many flares saved up in storage. Although these aren't super flared like some other jeans I own, I love how these jeans feel like....well jeans. They don't feel like leggings or have any spandex, they're a just plain old, well made pair of jeans. Loooove that we're going back to the 70s- I totally could have been a flower child.

fashionable foodie: ahi tuna nicoise salad

I'm a sucker for ahi tuna. It's just so delicious and hits all the right spots. After dining with my besties at Fred's in Chicago (inside of Barney's), I knew I had to make a healthier replica of their ahi tuna nicoise. It was just so delish. Here's what I came up with on my own:

Ingredients

- 1 lb fresh tuna steak (good quality- Whole Foods never fails)

- 1 container of arugula

- 1 package of grape or cherry tomatoes

- 1/2 lb of french green beans

- 1 can of lima beans

- 4 eggs

- 1 package of white mushrooms

- 1/2 red onion

- dijon mustard

- olive oil

- 1/2 lemon

- truffle oil

- agave nectar or honey

Preparation

- Unpack the the tuna. Wash it off and pat dry. Put it on a plate and salt and pepper both sides. Use about a tbsp of dijon on each side of the tuna steak and blend into the fish. Place it to the side.

- Boil the eggs for about 8 to 10 minutes in a pot on the stove.

- Meanwhile, cut thin slices of onion. Wash and cut the green beans into one inch pieces. Heat a skillet on medium heat and coat with tbsp of olive oil. Throw in the onions and beans and sautee about three to five minutes. (I like my green beans crunchy!) Season with salt and pepper.

- Clean and chop the tomatoes in half. Roughly chop the mushrooms into tiny slivers.

- Drain the can of beans and rinse them in water. Put them in a small bowl. Use about a tablespoon of truffle oil, salt and pepper and stir. Let them sit aside.

- In another small bowl, whisk together about 1 tbsp of agave nectar, 2 tbsp of dijon mustard, the juice of one lemon and a tbsp of olive oil. Season with salt and pepper. (if it's too sweet add dijon, if too bitter, add more agave)

- In a large bowl toss the arugula in with the honey dijon vinaigrette. Toss in the tomato, mushrooms, green beans, lima beans, and onion.

- In a medium skillet, heat olive oil on medium high. When the pan is hot, add the tuna. Cook about 2 minutes on one side and 1 minute on the other. (Basically let it get brown around the sides, but not a second longer.) Remove and cut into thin layers.

- Drain, peel and cut the boiled eggs into wedges.

- Assemble the salads by plate, add tuna on top and garnish on the sides with the egg. Crack pepper on top!

Fridays are usually my day off, but this past Friday was not so fun. Not only did I have to pack for my big move to Dallas but I was also stuck indoors all day writing for my new internship. Guess what turned my frown upside down at around 3 o'clock....this Shavonne DeAnn dress sitting in the mail!! I know most people's automatic reaction to this mini dress would be to put some stilettos on and go for a night on the town. I decided to go a different route and dressed it down for a day walking around the city. (Hey it got more exposure). I challenge you pretties to use dresses that you normally think would only be for clubbing and transition them into day pieces. You might be very pleasantly surprised!! I was walking around the room and her corset caught my eye before I even looked at the tiny name tag on the model's arm! She's meant for haute couture. Maybe one day she'll be a famous designer and maybe one day I'll be her lucky lawyer...keep an eye out for her fellas.

So when I first won the giveaway on Natalie Off Duty, I have to say I was a little apprehensive. I'm a little Mexican girl and I've got a little extra Mexican in the booty if you know what I mean. For those of you who don't get it- I'm a small girl with real curves so pants are always a struggle with me. I tried these beautiful Big Star pants on as soon I got them in the mail and they (shockingly) fit like a glove!! I love these and I want more... Seriously guys- these are the bomb and perfect for spring and summer. I'll be wearin' them often so get used to seeing them on me!

fashionable foodie: mexican shrimp burgers

Pescetarians like myself need to switch it up every once in a while. I love veggie burgers and I love a fresh piece of fish on a bun, but sometimes I miss the juiciness of a burger. No, I don't miss the taste of meat, just the big thick juicy patty. After watching Mexican Made Easy the other day, I got inspired. Here is my healthy twist on Marcela's great dish- a mexican shrimp burger.

Ingredients

- 1 lb of peeled and deveined shrimp

- 1 poblano pepper, roasted, peeled, and seeded

- 3 garlic cloves

- 1 egg

- 3/4 cup of whole wheat bread crumbs

- 4 tbsp of cilantro

- 2 avocados

- 2 limes

- 1 serrano pepper, minced

- 1 tomato

- 1/2 red onion

- whole wheat hamburger buns

- 4 cups of uncooked spinach

Preparation

- In a food processor, add the shrimp, one garlic clove, 2 tbsp of cilantro, the poblano pepper, egg and bread crumbs, season with a pinch of salt and pepper. Pulse until completely combined and molds easily in your hand. (if it's too sticky, add more breadcrumbs and pulse)

- Make 6 patties with the mixture and place them next to the stove top. Heat a large skillet or grill pan on medium high heat. Spray with olive oil cooking spray. Add the patties and cook about 3-4 minutes on each side.

- While the patties are cooking, combine the avocado, the juice of two limes, the rest of the cilantro, serrano pepper, and 2 garlic cloves completely minced. Season with salt and pepper.

- Toast the hamburger buns and spread the top with guacamole. Assemble the burgers with spinach, red tomato, and red onion.

- Enjoy!
